Crispy fried fish in the tangy mango salad

Ingredient and Portion
• 1 Green mango cut into brunoise (1/8″ cubes)
• 1/4 Cup Dried shrimp
• 1/4 C red onion cut into brunoise (1/8″ cubes)
• 1 Tbs minced cilantro
• 1/2 tsp kosher salt (less if you use regular salt)
• 1 Tbs lime juice
• 1 serrano chili minced with seeds
• 1 tsp your favourite hot sauce (optional)
• 2 fillets of fish (salmon, swordfish and halibut )
Method
1. Put the green mango, bell pepper, onion, cilantro, salt, lime juice, chili and hot sauce in a bowl and toss to combine.
2. Use a paper towel to dry the surface of the fish and salt and pepper.
3. Grill over charcoal, broil or pan-fry.
4. To serve, just top the cooked fillet with a dollop of green mango pico de gallo.
