Today I'd like to present you a yummy fish menu with a taste of spice. This spicy and sour soup recipe is unique. I've added young coconut as a special ingredient into the soup. The ingredients may seem randomly mixed but the taste was superb. So please enjoy my menu!

Ingredient and Portion
1 tilapia
1 young coconut (use both coconut water and meat)
3 lemongrass
10 pieces of young galangal
5 pieces of garlic
5 pieces of shallot
7 chili peppers
1 tbsp of chili powder
3 tomatoes
1 tbsp of tamarind juice
1 lime
1 tsp of salt
1 tbsp of fish sauce
Seasoning
Lemongrass
Young galangal
Garlic
Shallot
Chili pepper
Chili powder
Tomato
Tamarind juice
Lime
Salt
Fish sauce
Sprout onion
Coliander
Culantro
Kaffir lime leaf
Method
1. Prepare your fish by removing scales and innards. Cut into bite size. Rinse thoroughly and soak in rice water.
2. Break coconut shell and pour out its water. Remove coconut meat from shell.
3. Boil fresh water with coconut water in a pot. Add lemongrass, galangal, garlic, shallot, kaffir lime leaf and salt.
4. When foam up, season with chili, chili powder, tomatoes, tamarind juice, lime juice and fish sauce.
5. Add the tilapia into the pot when the soup is boiling. Don’t stir. Cover the pot lid. When the tilapia is cooked, add coconut meat.
6. When foam up, add sprout onion, coliander, culantro and kaffir lime leaf. Ready to serve.
Tips
Soaking a fish in water from uncooked rice can help reduce fishy smell.
