1. Prepare your fish by removing scales and innards. Cut into bite size. Rinse thoroughly and soak in rice water.
2. Break coconut shell and pour out its water. Remove coconut meat from shell.
3. Boil fresh water with coconut water in a pot. Add lemongrass, galangal, garlic, shallot, kaffir lime leaf and salt.
4. When foam up, season with chili, chili powder, tomatoes, tamarind juice, lime juice and fish sauce.
5. Add the tilapia into the pot when the soup is boiling. Don’t stir. Cover the pot lid. When the tilapia is cooked, add coconut meat.
6. When foam up, add sprout onion, coliander, culantro and kaffir lime leaf. Ready to serve.
