1. Put grind pork and golden needle mushroom into a mixing bowl.
2. Add all seasonings; mint leaves, culantro, sliced shallots, ground rice, dried chili, lime juice, fish sauce and sugar.
3. Mix all ingredients well. Mold the mixture into bite-sized balls.
4. Prepare tempura flour by mixing with water. Soak the pork balls in the tempura mixture.
5. Deep fry the pork balls in high-heat until the balls turn golden. Fetch up from the pan and drain out oil.
6. Serve with fresh vegetables.
