This is my second visit at this branch for the now large chain of “indy” coffee shop over the past two years. Nevertheless, I don’t recognize any barista here at all and the all women team this time is in contrast with the all men team from my last visit. Let start with espresso of house blend, comprising all Thai coffees. This coffee has an indescribable acidity with some form of savory tone. The pull was on a tight side but the cup remains drinkable and better than what I had here two years ago as it’s not as extremely tight, a profile that shared by lots of Thai cafe I suffered from at the time. I would say this is not a delicious cup of coffee but bearable if you really need to have some coffee.

I opted for the pour over of the famous Thai coffee farm, Sopa Estate (S-40) with a tasting note of bright acidity, vanilla and clean aftertaste. What I get mostly is tree bark tone which seems to be quite a common for all Thai coffee I have had so far.

There is a very distant and fainted vanilla tone, if at all, at best. The aftertaste is clean as said but that distracting bark tone continues to haunt me, making the overall coffee not quite comfortable to drink.

Barista Fang, a trainer of barista at Casa Lapin group, did a decent job in hand dripping coffee. Mind you this is neither the best drip in town nor the undrinkable cup. It’s sort of middle of the road style that I can’t complain but am not impressed. Also, this style makes sense as Casa Lapin’s benchmark, allowing Casa Lapin to standardize the brew quality among various branches, the issue that is sorely needed to be solved at Casa Lapin, in my humble opinion, after drinking up and downs cups at three Casa Lapin branches on this trip.

The decor and ambience at this place remains exactly the same as two years ago so if you fall in love with the place, you’re in luck to come back to what you like for your next visit.

題外話/補充資料： Neither good nor bad coffee. This is the place to enjoy the ambience more than coffee.

I really want to visit this place for quite some time after the search and don’t really understand the sudden disappearance from the scene of Casa Lapin vs. other newer hipster cafés in town. So let try it out.

First thing first, which branch. It’s a simple decision that is not so simple as I was later learned each branch is quite different on coffee from coffee people I know of.

Some coffee people I respect on his opinion suggests me to come to this particular branch. At least, it houses a roaster here so there is a higher chance that the quality of the cup of coffee might be somewhat better than other branches. So let see how it is.

On the decor, I’ve never really liked this kind of hipster design but somehow this place seems to strike a good balance of being hipped and being comfortable enough to hang out. This is, by itself, an achievement!

Owned by architect, the space looks really well thought out with lots to look at. No matter how nice these tiny little details are, in a way, these detail could act as a deterrent to focus on the coffee. A good distraction, I guess, or at least that what the interior decorator thinks! ;)

After I place an order, I am given the number which is a worn out steel plate. This fits the hipster style of the place well.

Starting with cappuccino. This drink feels quite tight to me either from the too tight/updose shot of coffee or too little milk vs. coffee in the cup, resulting in a sour drink.

The sourness of the drink is so much so I couldn’t appreciate how good the frothed milk is. It is a stark contrast to very good milk drinks from two other cafes of different style which are Bubble Café and One Ounce for Onion the day before.

This café is quite well equipped on coffee gears. However, when I’m at the counter, the maintenance issue draws into a question as I hear steam continuously spewing out of Uber Boiler. While the staff said Uber Boiler is broken, they continue to use it, making me wonder how this affects the temperature of the water and, somewhat further along the line, the issue with the state of other equipment in this cafe and the quality of its barista training program.

Back to the coffee, I had a totally opposite experience with my espresso vs. that of the milk drink. This is the first place in Bangkok on this trip that pulled espresso long enough and drinkable.

Nevertheless, the cup is not what I would call delicious as the quality of the coffee used remains a big issue. The coffee itself is woody, not sweet and not much else.

The roaster himself happens to be at the bar and he talks me into trying this coffee he has a few on hands on that day which is a Honey Processed Thai coffee from Mae Jan Tai area in Chiang Rai province.

This is probably the best drip I had up until this point in my trip. It has a nice and sweet fruity tone with a tiny hint of bark which seems to be a character of quite a few Thai coffee I had in the past. This is also among a very good Thai coffee I have had so far.

What amazed me is that this barista only works there for two months. Maybe the café is at its slow time late into the afternoon so he has a chance to run the bar himself. This is a good chance indeed for both him and me.

I thought that the issue with any new barista is consistency so I give him a try to see how he is with another coffee. The last coffee I had that day is an espresso of a single origin bean from Thailand which is roasted dark for iced coffee. Yes, single origin espresso for iced coffee and espresso blend for black! This cup is not bad at all; it’s a tad dark due to the roast level but still shows some nice acidity in the cup with a decent mouthfeel, IIRC.

Overall, this issue with Casa Lapin is that there are lots of branches and each one is more likely to be different than another. In addition to words I had from coffee people I know of, the drop on its popularity among coffee reviews/customers if you googled the shop could mean something, IMHO.

For this particular branch, the issue on this visit is the consistency among drinks which, somehow, is rather expected from a new barista. The coffee on offering is in between traditional and third wave in style though not really far into third wave coffee i.e. almost touch the third wave. So, if you want to have a hipster but comfortable ambience with a somewhat okay coffee i.e. a talk place with a decent coffee, it’s not bad at all and this is the place for you.

คาซ่า ลาแปงก็เช่นกัน เป็นร้านกาแฟสวย แต่มีหลากหลายสาขา ที่ผมเลือกสาขานี้เพราะได้รับคำแนะนำจากคนทำกาแฟหลายคนบอกถ้าจะมาก็ควรมาสาขาใหญ่ที่นี่ เพราะนอกจากร้านกาแฟยังมีโรงคั่วเล็กๆอยู่ภายในร้านด้วย คนคั่วดูเป็นคนไฟแรงด้านกาแฟ ออกมาพูดคุยกับลูกค้าเมื่อมีเวลา ซึ่งหายากเพราะ ส่วนใหญ่โรงคั่วจะอยู่แยกจากร้านกาแฟออกไปไกล คนคั่วกาแฟเลยดูเป็นคนสันโดษไปยังงั้น

แต่การที่อยู่ที่เดียวกันดีที่ทำให้เห็นปฎิกิริยาของลูกค้าทันทีว่า กาแฟที่คั่วไปเป็นยังไง ควรจะหากาแฟอะไรมาเพิ่มเติมให้ถูกใจลูกค้าได้ ลูกค้าก็ได้เธียร์เตอร์ เอฟเฟค ตื่นตาตื่นใจ กับเครื่องคั่วและการคั่วโชว์สดๆ ช่วยให้ทานกาแฟได้อร่อยขึ้นผมว่า

นอกจากหน้าร้านที่ดูร่มรื่น สมแล้วที่เจ้าของเป็นสถาปนิก กำแพงแบบโชว์อิฐก็ดูฮิบดีจริงๆ ตกแต่งกำลังดีไม่ถึงกับหลุดโลก หรือเจาะจงแต่เฟอร์นิเจอร์ของเก่าใช้แล้ว หรืออะไรประหลาดๆอย่างที่ร้านคลื่นลูกที่สามหลายร้านชอบทำกันและคิดว่าดี

เคาน์เตอร์กาแฟมีที่นั่งอยู่สองที่แค่นั้น น่าเสียดายที่ควรมีมากกว่านี้ การที่บาริสต้าได้สัมผัสกับลูกค้าอย่างใกล้ชิดจะช่วยกระตุ้นบาริสต้าพัฒนาตัวเองทั้งการเทคแคร์ลูกค้าและการชงกาแฟในเวลาเดียวกัน ลูกค้าก็ได้ความรู้ข้อแนะนำด้านกาแฟ รวมทั้งผลสะท้อนตอบรับของลูกค้าจะมาในทันที เป็นข้อมูลให้นำไปแก้ไขปฏิบัติซึ่งบางทีอาจจะเป็นเรียวไทม์กันเลยที่เดียว

ผมขอประเดิมคอมเพลนก่อนเลยว่านั่งอยู่นานพอควรไม่มีน้ำให้ซักแก้วเลย ซักพักใหญ่เลยทีเดียว บาริสต้าก็เห็นอยู่ว่างๆตรงหน้านี่เองไม่ได้กำลังง่วนทำอะไรอยู่ มองดูก็ไม่เห็นมุมน้ำดื่มแบบรินเองที่ร้านกาแฟแบบนี้ชอบทำกัน นี่ถ้าไม่ “รบกวน” เอ่ยปากขอน้ำก็คงไม่ได้ทาน บังเอิญวันนั้นลืมเอาน้ำดื่มติดตัวไปเลยต้องพึ่งทางร้าน

ร้านนี้มีข้อดีที่มีอะไรให้ดูเยอะแยะไปหมด ของตกแต่งเยอะ แต่ดูไม่รก สมแล้วที่เป็นร้านที่สถาปนิกเป็นเจ้าของเอง แต่ถ้าไม่กะเวลาดีอาจจะต้องนั่งกันยาวทีเดียว กว่าจะได้ทานกาแฟครบอย่างที่อยากทานเพราะมัวแต่เพลินดูของ

ป้ายออร์เดอร์ดูขลังแต่เหมือนกับว่าโดนใช้งานมาก ไม่ได้จงใจให้เป็นแอนทีค อาจจะเป็นเพราะการให้แสงในร้านด้วย ทำให้ทุกอย่างดูดี รายละเอียดยิบย่อยแบบนี้ร้านกาแฟคลื่นลูกที่สามดูเหมือนแทบจะไม่ให้ความสนใจเอาเสียเลย นอกจากตกแต่งได้ดียังนั่งสบายด้วย หาได้ยากในร้านกาแฟคลื่นลูกที่สามที่ส่วนใหญ่ไปมุ่งแต่จะทำกาแฟให้ได้ดี แต่ลืมความรู้สึกของลูกค้าในร้านกับการตกแต่งและบรรยากาศไป

เริ่มด้วยแคปปูชิโน่เช่นเคย โดยรวมรสชาดออกมาทางคลาสิคไม่ใช่ไปทางร้านกาแฟคลื่นลูกที่สาม แต่มันมาอีกแล้ว กาแฟนมเปรี้ยวเหมือนกับว่าดึงกาแฟออกมาเข้มข้น (tight) มากๆ และ/หรือ รู้สึกว่ามีปริมาณนมน้อยเกินไปเมื่อเทียบกับกาแฟ

ผลลัพธ์คือมันไม่ค่อยบาลานซ์สมดุลนัก ไม่ต้องไปเทียบกับกาแฟนมที่ทำได้ดีๆอย่างกาแฟจากร้านบับเบิล หรือแม้แต่กับ วันเอานซ์ ซึ่งดีทีเดียว แก้วนี้ไม่ผ่านสำหรับผมครับ

ระหว่างที่นั่งไปก็ได้ยินเสียงไอน้ำร้อนพุ่งออกมาเป็นระยะๆจากเจ้าอูเบอร์ บอยเลอร์ (Uber Boiler) ที่เป็นเครื่องทำน้ำร้อนเร่งด่วนที่ใช้กันในร้านกาแฟคลื่นลูกที่สามทั่วไปที่จริงจังกับการชงกาแฟฟิวเตอร์ พนักงานบอกเครื่องเสีย รอช่างมาซ่อม แต่ก็ยังเห็นบาริสต้าใช้งานตลอด ไม่รู้มีผลต่ออุณหภูมิหรือเปล่า

แก้วต่อมาเป็นเอสเพรสโซ่ แปลกดี กาแฟนมทานแล้วรู้สึกว่ากาแฟมันเข้มข้นมาก (tight) แต่เจ้าเอสเพรสโซ่ไม่รู้สึกเช่นนั้น ทำให้ดื่มได้ดีไม่ทรมาณ แต่กับตัวกาแฟเอง มีรสออกทางไม้ๆ woody แล้วก็ไม่มีรสชาดอะไรที่เด่นเลย

ไหนๆมาแล้วก็ลองให้ครบ คนคั่วแนะให้ลองกาแฟนอกเมนูของกาแฟวันนั้นซึ่งเป็น กาแฟจาก แม่จันใต้ จากเชียงราย แต่มีพิเศษที่เป็นฮันนี่โปรเซส (Honey Process) ที่เรียกง่ายๆว่าเป็นกาแฟลูกครึ่งการโปรเซสกาแฟ ระหว่างกาแฟรสละมุนละไมสะอาดแบบล้างน้ำ (washed) กับกาแฟตากแห้งที่รสจัดจ้านกว่า (dry processing)

คำแรกก็รู้ได้เลยว่ากาแฟนื้ไม่ใช่เล่นๆเลยทีเดียว นี่มาจากปากของคนที่ไม่ค่อยชอบกาแฟแบบทั้งดรายและฮันนี่เท่าไหร่ กาแฟให้รสหวานและผลไม้ที่พอใช้ได้ทีเดียว ละม้ายคล้ายคลึงกับกาแฟฮันนี่โปรเซสที่เคยทาน มีติดติ่งมานิดนึงเป็นเปลือกไม้นิดๆที่แอฟเตอร์เทสตอนท้ายๆ ที่ดูเหมือนจะเป็นแคแรคเตอร์เจ้าประจำอย่างหนึ่งของกาแฟไทยเท่าที่ผมได้ทานมา เหมือนกับจะขาดไม่ได้

แต่แปลกที่เจ้านี้เสิร์ฟกาแฟดริปกับโซดา ปกติโซดาจะเสิร์ฟกับเอสเพรสโซ่เป็นส่วนใหญ่

ฝีมือดริป พอใช้ได้เลย ณ ตอนนั้นนึกเลยไปว่า กรุงศรีอยุธยาไม่สิ้นคนดีจริงๆ โล่งอกไปที ทานดริปกี่เจ้าจนมาถึงเวลานั้น ไม่มีเจ้าไหนที่เรียกได้ว่าพอทานได้เลย ราวกับไม่รู้จักว่ากาแฟดริปควรเป็นเช่นไร รสชาดยังไง แก้วนี้ไม่ใช่ที่จะเรียกว่าสุดยอดแน่นอน ยังห่างไกลอีกเยอะ แต่อย่างน้อยกาแฟที่ออกมาเริ่มจะพอมีรสชาดให้พูดถึงได้บ้าง ถ้าจะติกันจริงๆคงอยู่ที่อาฟเตอร์เทสที่สะอาดพอควรแต่สั้นเกินไปที่จะนับได้ว่าเป็นดริปที่ดี

ที่น่าทึ่งอีกก็กับคนชง เพราะแกบอกว่าเพิ่งทำงานนี้มาได้ สองเดือน แต่ไม่ถึงกับแปลกใจ ในวงการคนทำกาแฟมีเยอะที่ก็แก่แค่พรรษา ชงกาแฟไม่ได้เอาเสียเลย ใช้พูดและวางตัวเก่ง อาศัยความเก๋าอยู่มานานเอาตัวรอดไปได้

พอทานเสร็จเหลือบไปเห็นถุงกาแฟของโรงคั่ว Espressoman วางเรียงรายอยู่ใต้เคาน์เตอร์ ทำให้สงสัยว่ากาแฟที่ทานไปทั้งหมดนั่นมาจากโรงคั่วไหนกันแน่ พอถามว่าเสิร์ฟกาแฟเจ้านี้ด้วยหรือ บาริสต้าบอกว่าเอาถุงมาทำการตลาดเฉย ไม่มีกาแฟอยู่ข้างใน แต่ก็แปลกดีที่มีอยู่มากถุงทีเดียว

แก้วสุดท้ายที่ได้ลองเป็น ซิงเกิ้ลออริจิน เอสเพรสโซ่ ของกาแฟไทย ที่น่าประหลาดคือกาแฟตัวนี้แทนที่จะใช้เพื่อเสิร์ฟเป็นกาแฟเอสเพรสโซ่ อย่างที่เค้าทำกันทั่วไปกับกาแฟแบบ ซิงเกิ้ลออริจิน กลับใช้เสิร์ฟเป็นกาแฟเย็น แต่ลองสั่งแก้วนี้เป็นเอสเพรสโซ่ดู ใช้ได้ทีเดียว คั่วเข้มไปนิดแต่ไม่เกินคาดเพราะใช้กับกาแฟเย็น แต่ก็ยังเจอกรดผลไม้หวานพอควร

เอาเข้าจริง ร้าน คาซ่า ซอย ๒๖ ค่อนค้างจะเป็นอะไรที่เหนือความคาดหมาย กาแฟดริปถึงจะไม่เลอเลิศก็อยู่ในขั้นที่พอทานได้ เอสเพรสโซ่แก้วที่สองดีกว่าแก้วแรกอย่างเห็นได้ชัดทั้งตัวกาแฟและการชง กาแฟนมยังคงเอกลักษณ์เหมือนหลายต่อหลายเจ้าในกรุงเทพที่ทานมาก่อนหน้านี้ คือติดเปรี้ยว กาแฟมีทั้งทานไม่ค่อยได้กับพอทานได้บ้าง แสดงว่าฝีมือยังไม่คงที่ แต่อย่างน้อยการมีแก้วที่ดีบ้างโชว์แนวโน้มในทางที่ดี ฝึกปรือฝีมือมากหน่อยฝีมือน่าจะคงที่และดีกว่านี้

ถึงจะมีอะไรแปลกๆ เช่น ถุงเปล่ากาแฟโรงคั่วอี่นที่วางเรียงเหมือนซ่อนอยู่แต่ไม่มิดใต้เคาน์เตอร์ หรือ กาแฟ ซิงเกิ้ลออริจิน เอสเพรสโซ่ ของกาแฟไทย แต่ไพล่ไปใช้ทำกาแฟเย็น โดยรวมร้านนี้รสชาดที่ได้ไม่ถึงกับผิดหวัง แต่ยังไม่ดีเท่า วันเอานซ์ หรือ บับเบิลคาเฟ แน่นอน แต่อย่างน้อยสองแก้วจากสี่แก้วยังพอทานได้ ผมให้เครดิตตรงนี้ก็แล้วกัน

การที่ คาซ่ามีหลายสาขา โอกาสที่แต่ละร้านจะต่างกันมากๆแบบหน้ามือเป็นหลังมือมีได้มากแน่นอน เพราะฉะนั้น แนะนำได้เฉพาะสาขาที่ได้ไปทานเองเท่านั้นคือที่สาขานี้ สาขาอื่นไม่แน่ใจว่าะเป็นอย่างไร

題外話/補充資料： ถามบาริสต้าว่ากาแฟตัวไหนดี ถ้าถามคนคั่วได้ยิ่งดีใหญ่ โอกาสที่จะได้กาแฟนอกเมนูที่อาจจะดีมากๆมีมาก เพราะคนคั่วจะรู้ทีเดียวว่าตัวไหนดีใหม่น่าสนใจ
